I don't know whether it is common or not, but I don't think that it is particularly rare on larger size pieces like your thirty-gallon jar. Clusters of three, four or more pair of leaves have been seen; these ARE rare.
In answer to your second question, I've been particulary fond of Red Wing Potters & Their Wares as a source of information on the history and products of Red Wing's stoneware industry. The book has 200 pages, over 750 photos, an originally researched historical account and a companion Price Guide which is published every two years, so you don't have to buy a whole new book when the values go out of date.
